maker and did many jobs on the farm. She also worked in retail at various places, as well as custodian at Old Westbrook Lutheran Church for sixteen years and also as office secretary. Carol was faithful in serving in the Sharon Lutheran Church and Old Westbrook Lutheran Church as Sunday school teacher, Superintendent, and Vacation Bible School. Church women's organizations were very important to her and she held many positions as Old Westbrook Lutheran's Shetek Conference. She enjoyed faithfully attending the Conference and Synods gatherings. While living in Windom, she maintained membership at Old Westbrook, and attended Lutheran Church of Our Savior as an associate member. When Carol moved to Mankato, she attended Bethlehem Lutheran Church. Bible study was very important to her as she attended Circles, etc. in each church. She enjoyed working at the Nordic Fest at Bethlehem Lutheran Church. She was a 4-H leader for the local members, as well as Cottonwood County. She was an honorary member of the Highwater Garden Club. While in Windom, she volunteered as a RSVP, where she especially enjoyed ushering at BARC concerts. Carol served as Secretary and Treasurer at the Quarter Horse Shows in Windom where she and Dennis devoted years of service. Family and friends were utmost important to Carol and remained treasures in her life. She loved to entertain in her home, as well as decorate her home for all occasions. She was a Mary Kay Cosmetic consultant for fifteen years and enjoyed hosting shows and serving friends. She was an avid sportsperson of the Minnesota Twins and Timberwolves. She is survived by two daughters, Patricia Nelson and her husband, Jon, of Mankato and Cindy Haas and her husband, James, of Eagan; grandchildren: Derek Nelson and his wife, Jamie, Cameron Nelson, and Brittany and Dustin Haas; two great-grandchildren, Quinn and Ian Nelson; one brother, Norman Anderson and his wife, Connie; one aunt, several nieces and nephews, and one sister-in-law, JoAnn Moots and her husband, Willard. She was preceded in death by her parents, husband, many relatives and special friends. Blessed be the memory of Carol E. Knutson.
